- 1 cup unsalted butter, softened
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1.5 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and prepare a greased or parchment-lined baking pan (9×13 inch).
- In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt.
- Gradually add the dry mixture to the wet ingredients until just combined. Fold in rolled oats.
- Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until golden brown.
- Allow bars to cool completely before icing with a mixture of powdered sugar, milk or cream, vanilla extract, and optional salt.
