  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 2 cups oats (quick cooking or old fashioned)
  • 4 tablespoons milk
  • 2 cups powdered sugar (sifted)
  • water (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the shortening and sugars until light and fluffy.
  3. Beat in the water and vanilla until well combined.
  4. In another bowl, combine flour, baking soda, salt, nutmeg, and cinnamon. Gradually add this mixture to the creamed mixture and mix well. Gently fold in the oats.
  5. Drop dough onto greased baking sheets using a cookie scoop. Bake for 10-12 minutes until golden brown. Allow cookies to cool on a wire rack.
  6. While cooling, prepare the icing by mixing milk and powdered sugar; adjust consistency with water as needed.
  7. Dip the tops of each cookie in the icing and let any excess drip off before placing them back on the wire rack.
