- 3/4 cup shortening
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 2 cups oats (quick cooking or old fashioned)
- 4 tablespoons milk
- 2 cups powdered sugar (sifted)
- water (as needed)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the shortening and sugars until light and fluffy.
- Beat in the water and vanilla until well combined.
- In another bowl, combine flour, baking soda, salt, nutmeg, and cinnamon. Gradually add this mixture to the creamed mixture and mix well. Gently fold in the oats.
- Drop dough onto greased baking sheets using a cookie scoop. Bake for 10-12 minutes until golden brown. Allow cookies to cool on a wire rack.
- While cooling, prepare the icing by mixing milk and powdered sugar; adjust consistency with water as needed.
- Dip the tops of each cookie in the icing and let any excess drip off before placing them back on the wire rack.
