- 2 cups powdered sugar
- 1 teaspoon cinnamon
- 2 tablespoons water
- 1 1/2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
- In a bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix melted butter, pumpkin puree, sugar, molasses, vanilla extract, and eggs until smooth.
- Gradually combine dry ingredients into the wet mixture until fully incorporated.
- Use a medium-sized scoop to drop dough onto prepared sheets.
- Bake for 10 to 12 minutes until lightly browned. Cool on sheets before transferring to wire racks.
- Prepare icing by whisking powdered sugar, cinnamon, water, and vanilla until desired consistency is reached; frost cooled cookies.
