- 2 cups crushed chocolate cookies (or graham crackers)
- 1/2 cup melted butter
- 16 oz cream cheese
- 1 cup granulated sugar
- 8 oz melted dark chocolate (60% to 72% cocoa)
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (175°C).
- Combine crushed cookies and melted butter; press into a springform pan to form the crust.
- Bake crust for 10 minutes; let cool.
- Beat cream cheese until smooth; add sugar, then melted chocolate and vanilla.
- Incorporate eggs one at a time, mixing minimally.
- Gently fold in raspberries; pour filling over crust.
- Bake for about 60 minutes until set but jiggly in center.
- Cool gradually in the oven with door ajar; chill in the fridge for at least four hours before serving.
