- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash bananas until you have 2 1/4 cups.
- In a large bowl, mix flour, salt, baking soda, and nutmeg.
- Cream butter with both sugars in another bowl; add cinnamon, eggs, vanilla, and mashed bananas, mixing well.
- Combine the banana mixture with dry ingredients gently until just blended.
- Spray a pan with cooking spray; pour in the batter.
- Set up your Instant Pot with a trivet and a cup of water.
- Cover the pan with foil and place it in the pot; seal the lid and cook on manual mode for 50 minutes.
- Perform a quick release after cooking; cool on a wire rack before slicing.
