  • 1/2 cup breadcrumbs
  • 2 tbsp jerk seasoning

  • 1/4 cup chopped onion

  • 1 can (13.5 oz) coconut milk
  • 2 tbsp curry powder
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper. Mix until well blended.
  2. Roll the mixture into 1-inch meatballs and place them on a baking sheet.
  3. Heat oil in a large skillet over medium heat and brown the meatballs for about 2-3 minutes on each side.
  4. Add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce to the skillet; stir to combine.
  5. Simmer the sauce for about 10-15 minutes until it thickens slightly.
  6. Carefully add the meatballs to the sauce and cook for an additional 5 minutes until heated through.
  7. Garnish with fresh cilantro before serving.
