Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 2 tbsp jerk seasoning
- 1 egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1/4 tsp black pepper
- 1 can (13.5 oz) coconut milk
- 2 tbsp curry powder
- 1 cup chicken broth
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1/4 cup chopped fresh cilantro
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper. Mix until well blended.
- Roll the mixture into 1-inch meatballs and place them on a baking sheet.
- Heat oil in a large skillet over medium heat and brown the meatballs for about 2-3 minutes on each side.
- Add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce to the skillet; stir to combine.
- Simmer the sauce for about 10-15 minutes until it thickens slightly.
- Carefully add the meatballs to the sauce and cook for an additional 5 minutes until heated through.
- Garnish with fresh cilantro before serving.
