Ingredients
- 6 cups chopped kale
- 1 teaspoon olive oil
- 1 cup cooked quinoa
- 1 cup canned chickpeas (drained and rinsed)
- 1/3 cup diced red onion
- 1/3 cup diced cucumber
- 1/3 cup pepitas
- 1/3 cup golden raisins
- olive oil and lemon juice for dressing
Instructions
- Rinse and dry the kale thoroughly. Chop it into bite-sized pieces and place it in a large mixing bowl.
- Drizzle olive oil over the kale and massage it for about 1–2 minutes until tender. Let it rest for 10 minutes.
- Add cooked quinoa, chickpeas, diced red onion, cucumber, pepitas, golden raisins to the bowl with kale.
- In a separate bowl, mix olive oil and lemon juice to create the dressing. Pour it over the salad and toss gently until well coated.
- Serve immediately or refrigerate until ready to eat.
