Ingredients

  • 6 cups chopped kale
  • 1 teaspoon olive oil
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • olive oil and lemon juice for dressing

Instructions

  1. Rinse and dry the kale thoroughly. Chop it into bite-sized pieces and place it in a large mixing bowl.
  2. Drizzle olive oil over the kale and massage it for about 1–2 minutes until tender. Let it rest for 10 minutes.
  3. Add cooked quinoa, chickpeas, diced red onion, cucumber, pepitas, golden raisins to the bowl with kale.
  4. In a separate bowl, mix olive oil and lemon juice to create the dressing. Pour it over the salad and toss gently until well coated.
  5. Serve immediately or refrigerate until ready to eat.
