Ingredients

  • 8 hard-boiled eggs (peeled)
  • 4 tablespoons mayonnaise
  • 1/4 cup cooked spinach
  • 2 oz chopped artichokes
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and scoop out the yolks into a mixing bowl.
  2. Add mayonnaise, cooked spinach, chopped artichokes, Dijon mustard, garlic powder, grated Parmesan cheese, salt, and black pepper to the yolks. Mash together until smooth.
  3. Use a spoon or piping bag to fill the egg white halves with the mixture.
