- 8 hard-boiled eggs (peeled)
- 4 tablespoons mayonnaise
- 1/4 cup cooked spinach
- 2 oz chopped artichokes
- 1/2 teaspoon Dijon mustard
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cut the hard-boiled eggs in half lengthwise and scoop out the yolks into a mixing bowl.
- Add mayonnaise, cooked spinach, chopped artichokes, Dijon mustard, garlic powder, grated Parmesan cheese, salt, and black pepper to the yolks. Mash together until smooth.
- Use a spoon or piping bag to fill the egg white halves with the mixture.
- Garnish with paprika or fresh herbs if desired before serving.
