  • 23 tbsp key lime juice
  • 1 tsp key lime zest
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Combine milk, key lime juice, zest, and vanilla extract; then alternate adding the dry ingredients and the milk mixture to the butter mixture until just combined.
  6. Divide batter between prepared pans and bake for 28–32 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  7. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar, key lime juice, zest, and salt until fluffy.
  8. Frost cooled cakes as desired.
