- 4 cups Rice Krispies cereal
- 3 cups mini vegan marshmallows
- 2 tablespoons unsalted butter
- 1 cup fresh blueberries
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1 teaspoon vanilla extract (for glaze)
Instructions
- In a large pot over medium-low heat, melt the butter while stirring constantly.
- Add the mini vegan marshmallows and stir until fully melted and smooth.
- Remove from heat and fold in Rice Krispies until evenly coated. Gently fold in blueberries.
- Lightly grease a 9×9-inch baking pan or line with parchment paper. Transfer mixture into the pan and press down gently.
- Allow to cool at room temperature for about 30 minutes.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth; adjust consistency if needed.
- Drizzle glaze over cooled bars and let set for 10–15 minutes before slicing into squares.
