Ingredients

  • 12 fresh oysters (scrubbed clean on the half shell)
  • 6 tbsp unsalted butter
  • 2 garlic cloves (finely minced)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Sea salt and freshly ground black pepper (to taste)
  • Lemon wedges
  • Extra chopped parsley

Instructions

  1. Preheat your grill to high heat (around 500°F/260°C).
  2. In a small saucepan over low heat, melt the unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice, zest, parsley, salt, and pepper; remove from heat.
  3. Place the oysters on the grill with their flat sides up. Close the lid and grill for 2–3 minutes until edges curl.
  4. Spoon about 1 tsp of the lemon butter sauce onto each oyster and close the lid again. Cook for another 1–2 minutes until the butter sizzles.
  5. Carefully remove oysters from the grill using tongs and serve immediately with lemon wedges and extra parsley.
