- 12 fresh oysters (scrubbed clean on the half shell)
- 6 tbsp unsalted butter
- 2 garlic cloves (finely minced)
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp chopped fresh parsley
- Sea salt and freshly ground black pepper (to taste)
- Lemon wedges
- Extra chopped parsley
Instructions
- Preheat your grill to high heat (around 500°F/260°C).
- In a small saucepan over low heat, melt the unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice, zest, parsley, salt, and pepper; remove from heat.
- Place the oysters on the grill with their flat sides up. Close the lid and grill for 2–3 minutes until edges curl.
- Spoon about 1 tsp of the lemon butter sauce onto each oyster and close the lid again. Cook for another 1–2 minutes until the butter sizzles.
- Carefully remove oysters from the grill using tongs and serve immediately with lemon wedges and extra parsley.
