- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1 cup low-sodium chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare your ingredients by chopping the parsley and mincing the garlic.
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat and sear the chicken for 6-7 minutes on each side until golden brown.
- Add minced garlic to the skillet, then pour in the chicken broth and let it simmer for about 5 minutes.
- Mix cornstarch with cold water before adding it to the skillet; stir until the sauce thickens to your desired consistency.
- Squeeze fresh lemon juice over the chicken and sprinkle grated Parmesan cheese on top while allowing it to melt slightly.
- Garnish with chopped parsley before serving.
