- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled
- 1/4 teaspoon salt
- 1/4 cup lemon juice
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 tablespoon cornstarch
- 2 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- In a large bowl, whisk together flour, powdered sugar, and salt. Cut in chilled butter until crumbly.
- Form dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Roll out chilled dough to about 1/8-inch thickness and cut circles.
- Place cookies on a parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
- In a saucepan, combine lemon juice, granulated sugar, egg yolk, cornstarch, and lemon zest; cook over medium heat until thickened and cool.
- Beat egg whites with cream of tartar until foamy; gradually add sugar until stiff peaks form.
- Spoon lemon filling onto each cookie and top with meringue dollops.
- Broil for 1-2 minutes until meringue is golden brown; cool before serving.
