  4. Place cookies on a parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
  5. In a saucepan, combine lemon juice, granulated sugar, egg yolk, cornstarch, and lemon zest; cook over medium heat until thickened and cool.
