Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup milk
- 1 and 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- Zest from 1 lemon
- 1 and 1/2 cups raspberries
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in milk.
- In another bowl, combine flour, baking powder, salt, and lemon zest.
- Gradually mix dry ingredients into the wet batter without overmixing.
- Gently fold in raspberries.
- Spoon batter into a greased loaf pan and bake for 50 to 55 minutes or until a cake tester comes out clean.
- Cool for five minutes before transferring to a cooling rack.
