  • 3/4 cup full-fat yogurt
  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 tsp vanilla extract (or zest of one lemon)
  • A pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C) and prepare an 8-inch springform pan lined with parchment paper.
  2. Beat egg whites on medium speed until frothy; gradually add 1/3 cup sugar while whipping until stiff peaks form.
  3. In another bowl, mix egg yolks, yogurt, vanilla (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it, then fold in the remaining egg whites carefully.
  5. Pour batter into the springform pan and place it in a larger baking tray filled with hot water (bain-marie). Bake for 50-60 minutes until golden brown on top.
  6. Turn off the oven and let it cool inside with the door slightly open for about 15 minutes before removing.
