- 4 large eggs (separated)
- 1 cup granulated sugar
- 3/4 cup full-fat yogurt
- 2 tablespoons cornstarch (or sifted cake flour)
- 1 tsp vanilla extract (or zest of one lemon)
- A pinch of salt
Instructions
- Preheat oven to 325°F (160°C) and prepare an 8-inch springform pan lined with parchment paper.
- Beat egg whites on medium speed until frothy; gradually add 1/3 cup sugar while whipping until stiff peaks form.
- In another bowl, mix egg yolks, yogurt, vanilla (or lemon zest), cornstarch, and salt until smooth.
- Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it, then fold in the remaining egg whites carefully.
- Pour batter into the springform pan and place it in a larger baking tray filled with hot water (bain-marie). Bake for 50-60 minutes until golden brown on top.
- Turn off the oven and let it cool inside with the door slightly open for about 15 minutes before removing.
