  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 4 large russet potatoes
  • 3 tbsp butter
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, salt, and pepper.
  2. Shape the mixture into a loaf and place it on a baking sheet. Bake for 40-45 minutes until cooked through (internal temperature should reach 160°F/71°C).
  3. Scrub the potatoes and pierce them with a fork. Bake for approximately 45 minutes until tender or microwave for about 8-10 minutes.
  4. Cut the baked potatoes in half and scoop out the insides. Mash them with butter and sour cream; stir in cheddar cheese.
  5. Stuff the potato skins with the mixture, top with extra cheese, and bake for an additional 5-10 minutes until melted.
  6. Serve alongside your meatloaf.
