  • 1 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 8 tbsp unsalted butter (cubed; divided)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 1 cup granulated sugar

Instructions

  1. Line a baking sheet with aluminum foil and spray with nonstick cooking spray or use a silicone mat.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve.
  3. Insert a candy thermometer and cook while stirring until it reaches 240°F.
  4. Remove from heat; drop cubes of butter on top without stirring. Let sit for 1 minute.
  5. Add vanilla extract (optional) and pecans; stir continuously until combined.
  6. Drop spoonfuls onto the prepared baking sheet before the mixture sets.
  7. Allow pralines to cool at room temperature for about 30 minutes until fully hardened.
