Ingredients
- 1 cup packed brown sugar
- 1/2 cup evaporated milk
- 8 tbsp unsalted butter (cubed; divided)
- 1/4 cup boiling water
- 1 1/2 cups toasted and coarsely chopped pecans
- 1 cup granulated sugar
Instructions
- Line a baking sheet with aluminum foil and spray with nonstick cooking spray or use a silicone mat.
- In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve.
- Insert a candy thermometer and cook while stirring until it reaches 240°F.
- Remove from heat; drop cubes of butter on top without stirring. Let sit for 1 minute.
- Add vanilla extract (optional) and pecans; stir continuously until combined.
- Drop spoonfuls onto the prepared baking sheet before the mixture sets.
- Allow pralines to cool at room temperature for about 30 minutes until fully hardened.
