Ingredients
- 1 lb ground turkey (or chicken)
- 1 cup diced bell peppers (mixed colors)
- 1 cup sliced mushrooms
- 1 cup diced onions (yellow)
- 1 cup low-sugar tomato sauce
- 2 cups shredded cheese blend (mozzarella and cheddar)
- 2 tsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray an oven-safe baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground turkey for about 5-7 minutes, stirring occasionally. Drain excess fat.
- Add diced bell peppers, sliced mushrooms, and diced onions to the skillet; sauté until softened, approximately 5 minutes.
- Transfer the mixture to the prepared baking dish and pour the tomato sauce on top. Sprinkle with Italian seasoning and add the shredded cheese blend as a topping.
- Bake for 20-25 minutes or until bubbly and golden brown on top. Let cool slightly before serving.
