Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg yolks from the whites into two bowls.
- Blend cottage cheese until smooth; mix with egg yolks, cornstarch, sweetener, vanilla, and lemon zest.
- Whip egg whites with cream of tartar until stiff peaks form.
- Gently fold whipped egg whites into the cottage cheese mixture.
- Fold in fresh blueberries carefully.
- Spoon mounds of batter onto the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and firm.
- Let cool before serving.
