- 4 large carrots
- 3 large apples
- 1 onion
- 5 cloves garlic
- ¼ cup olive oil
- ¼ cup maple syrup
- 3 tablespoons Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Preheat oven to 425°F (220°C).
- Core and chop apples into ½” cubes; slice carrots diagonally into ¼” thick pieces; dice onion into ½” pieces; finely chop garlic.
- In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme until combined.
- Add chopped carrots, apples, onions, and garlic to the bowl; toss until evenly coated in the glaze.
- Spread mixture evenly on a baking sheet and roast for about 15 minutes. Flip halfway through cooking and continue roasting for another 10-15 minutes until tender and caramelized.
