1 head cauliflower, cut into florets
1 can (2.25 oz) sliced black olives
1/2 jar (12 oz) banana pepper rings
1 red bell pepper, diced
1/3 cup diced red onion
2 tablespoons chopped fresh parsley
1/2 cup olive oil
1/4 cup red apple vinegar
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons grated Parmesan cheese

Instructions

  • In a large bowl, combine the cauliflower florets, sliced black olives, banana pepper rings, diced red bell pepper, red onion, and chopped parsley.
  • In a separate small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, and black pepper until well combined.
  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  • Sprinkle grated Parmesan over the top and toss lightly again.
  • Cover and refrigerate for at least 1–2 hours to allow flavors to marinate. Serve chilled or at room temperature.
