- 2 cups chopped romaine lettuce
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1 sliced avocado
- 2 hard-boiled eggs, halved
- 1 cup grilled chicken breast, sliced
- 2 tbsp crumbled feta cheese
- ½ cup Kalamata olives
- Fresh parsley for garnish
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- ½ tsp dried oregano
- ½ tsp Dijon mustard (optional)
- Salt & pepper to taste
Instructions
- Prepare the base by arranging chopped romaine lettuce in a large salad bowl.
- Add toppings: Layer cucumber, cherry tomatoes, avocado slices, boiled eggs, grilled chicken, feta cheese, and olives over the lettuce.
- Make the dressing: In a small bowl, whisk together olive oil and lemon juice. Stir in oregano and season with salt and pepper.
- Drizzle dressing over the salad and sprinkle with fresh parsley before serving.
