- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- 3 tbsp olive oil

Instructions
- Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the sirloin steak thoroughly and marinate for at least 30 minutes.
- Prepare tzatziki: Mix Greek yogurt, grated cucumber (squeezed dry), lemon juice, minced garlic, fresh dill, salt, and pepper in another bowl. Chill while cooking.
- Cook steak: Heat a skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side until desired doneness is reached. Let rest before slicing thinly against the grain.
- Assemble bowls: Layer cooked grains in bowls and top with sliced steak, cherry tomatoes, cucumber, olives, and tzatziki sauce.
