- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1 can sliced pineapples (drained)
- Maraschino cherries
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a saucepan, melt unsalted butter over low heat, stir in brown sugar until smooth, and pour evenly into muffin cups.
- Place one slice of pineapple in each cup and top with a maraschino cherry.
- In a large bowl, cream granulated sugar and egg until fluffy; mix in milk and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt; gradually combine with wet ingredients until just mixed.
- Spoon batter over pineapple layers in muffin cups, filling each about three-quarters full.
- Bake for 20 minutes or until a toothpick comes out clean; cool slightly before serving.
