- 2 cups chocolate wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 8 oz cream cheese, softened
- 1 tsp peppermint extract
- 1 cup mini chocolate chips
- 2 cups whipped topping
Instructions
- Prepare the chocolate crust by mixing crushed cookies with melted butter and pressing the mixture into a 9×13-inch dish. Refrigerate.
- In a mixing bowl, beat cream cheese, powdered sugar, and peppermint extract until smooth. Fold in whipped cream and mini chocolate chips.
- Spread half of the mint filling over the chilled crust. If desired, drizzle melted chocolate ganache on top.
- Add another layer of crust and mint filling before finishing with whipped topping.
- Garnish with chocolate shavings or additional chocolate chips. Chill for at least four hours before serving.
