Ingredients
- 1 cup white basmati rice
- 2 tablespoons olive oil
- 6 strands of saffron
- 1 white onion (finely chopped)
- 1 garlic clove (minced)
- 1 teaspoon ground coriander
- ½ teaspoon ground fennel
- ½ teaspoon ground turmeric
- ½ teaspoon ground cardamom
- ½ cup mixed dried fruits (like apricots and raisins)
- ¼ cup toasted almonds (chopped)
- ¼ cup pistachios (chopped)
- Salt and pepper to taste
Instructions
- Steep saffron strands in boiling water for about 10 minutes.
- Rinse basmati rice under cold water until clear.
- In a medium saucepan, heat olive oil over medium-low heat and soften the chopped onion for about 5 minutes.
- Add minced garlic and spices; cook until fragrant.
- Stir in the rinsed rice for about 3 minutes, then add saffron water and additional water. Season with salt and pepper.
- Bring to a boil, cover, and simmer on low heat for 15-18 minutes.
- Turn off heat and lay dried fruits on top; cover and let sit for 10 minutes.
- Fluff with a fork, adding toasted nuts before serving.
