  • 6 strands of saffron
  • 1 white onion (finely chopped)

  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • ½ cup mixed dried fruits (like apricots and raisins)
  • ¼ cup toasted almonds (chopped)
  • ¼ cup pistachios (chopped)
  • Salt and pepper to taste

Instructions

  1. Steep saffron strands in boiling water for about 10 minutes.
  2. Rinse basmati rice under cold water until clear.
  3. In a medium saucepan, heat olive oil over medium-low heat and soften the chopped onion for about 5 minutes.
  4. Add minced garlic and spices; cook until fragrant.
  5. Stir in the rinsed rice for about 3 minutes, then add saffron water and additional water. Season with salt and pepper.
  6. Bring to a boil, cover, and simmer on low heat for 15-18 minutes.
  7. Turn off heat and lay dried fruits on top; cover and let sit for 10 minutes.
  8. Fluff with a fork, adding toasted nuts before serving.
