Ingredients

  • 2.0 to 2.3 pounds oranges (about 4 medium)
  • 1 lemon (zest and juice)
  • 1/3 cup water
  • 4 cups granulated sugar

Instructions

  1. Wash the oranges and lemon thoroughly.
  2. Cut off both ends of each orange, slice them in half and then cut each half into four pieces, discarding any seeds.
  3. Puree the chopped orange pieces in a food processor until finely chopped.
  4. Transfer the puree to a large saucepan over medium heat. Add the lemon zest and juice, water, and sugar; stir well.
  5. Bring the mixture to a boil, then reduce to a low boil and simmer for 30-35 minutes until thickened.
  6. To test doneness, pour a spoonful onto a cold plate; it should hold its shape slightly.
  7. Pour hot marmalade into clean jars or containers with lids and allow cooling before refrigerating or freezing.
