Ingredients
- 1 medium green cabbage (about 2–3 pounds)
- 4 tablespoons olive oil
- 4–6 garlic cloves, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- Remove any damaged outer leaves from the cabbage and slice it into 1-inch thick rounds.
- Arrange the cabbage slices on a lined baking sheet in a single layer.
- In a small bowl, mix olive oil, minced garlic, salt, pepper, thyme, and red pepper flakes.
- Use a pastry brush to coat both sides of each cabbage slice with the garlic-oil mixture.
- Roast for 15 minutes at 425°F to create crispy edges.
- Reduce the temperature to 375°F (190°C) and continue roasting for another 15-20 minutes until golden brown and tender.
- Drizzle with fresh lemon juice before serving.
