- 1 salmon fillet (approx. 150g)
- 1 cup broccoli florets
- 1 carrot (thinly sliced)
- 1 zucchini (sliced)
- 1 cup cherry tomatoes (halved)
- 1 clove garlic (minced)
- 1 tbsp olive oil
- Salt and black pepper to taste
- Dried herbs (e.g., oregano or Italian blend)
Instructions
- Season the salmon fillet with salt and black pepper. Heat half of the olive oil in a non-stick skillet over medium heat.
- Sear the salmon for about 3-4 minutes on each side until golden brown and just cooked through; then set aside.
- In the same skillet, add the remaining olive oil and minced garlic; sauté until fragrant (about 30 seconds).
- Add the sliced carrot, followed by zucchini, broccoli, and halved cherry tomatoes. Season with salt, black pepper, and dried herbs.
- Cook for about 6-8 minutes until vegetables are tender but still crisp.
- Serve the sautéed veggie medley in a bowl topped with the seared salmon fillet.
