- 1 1/2 cups all-purpose flour

- 1 cup diced fresh peaches (peeled)
- 1/3 cup old-fashioned oats
- 2 tablespoons unsalted butter, melted
- 2 tablespoons all-purpose flour
- 2 tablespoons light brown sugar
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, cream together softened butter with granulated and brown sugars until light and fluffy. Add egg and vanilla; mix well.
- Gradually combine dry ingredients into wet ingredients. Gently fold in diced peaches.
- In a small bowl, mix oats, melted butter, flour, brown sugar, and cinnamon until crumbly for the streusel topping.
- Using a cookie scoop or spoon, place dough on the prepared baking sheet and sprinkle each cookie with streusel.
- Bake for 13–15 minutes or until golden brown; cool on wire rack before serving.
