  • 1 cup diced fresh peaches (peeled)
  • 1/3 cup old-fashioned oats
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together softened butter with granulated and brown sugars until light and fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients into wet ingredients. Gently fold in diced peaches.
  5. In a small bowl, mix oats, melted butter, flour, brown sugar, and cinnamon until crumbly for the streusel topping.
  6. Using a cookie scoop or spoon, place dough on the prepared baking sheet and sprinkle each cookie with streusel.
