- 2 cups old-fashioned oats
- 1 cup creamy or chunky peanut butter
- 4 tablespoons unsalted butter
- ½ cup brown sugar
- ¼ cup whole milk
- 1 teaspoon vanilla extract
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup chocolate chips (melted)
Instructions
- In a medium saucepan over medium heat, combine butter, brown sugar, and milk. Stir until the butter melts and the mixture begins to bubble.
- Remove from heat and mix in peanut butter and vanilla until smooth. Gradually stir in the oats until evenly coated.
- Using a tablespoon or cookie scoop, portion the mixture onto parchment paper and flatten slightly. Create an indentation in each cookie.
- Spoon caramel sauce into each indentation generously.
- Melt chocolate chips in a microwave-safe bowl; drizzle over cookies using a piping bag or spoon.
- Refrigerate for at least 30 minutes to set.
