- 1 1/3 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 3/4 tsp table salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup vegetable oil
- 2 large eggs
- 1/3 cup water
- 1 cup canned pumpkin puree
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pans.
- In a mixing bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Add vegetable oil, eggs, and water to dry ingredients; stir until just combined.
- Gently fold in the pumpkin puree until fully mixed.
- Pour batter into prepared pans and bake: mini loaves for about 30 minutes or a large loaf for around 55 minutes until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack to finish cooling.
