- 1 cup unsalted butter, softened
- 1 (8 oz) block cream cheese, softened
- 2 cups granulated sugar
- 6 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 cup crushed pineapple, well-drained
- 1 cup sweetened shredded coconut
Instructions
- Preheat oven to 325°F (163°C). Grease and flour a bundt or loaf pan.
- In a mixing bowl, beat softened butter and cream cheese until fluffy. Gradually add sugar and mix until light and airy.
- Incorporate eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour and baking powder.
- Gradually add dry ingredients to the wet mixture until just combined. Gently fold in drained pineapple and shredded coconut.
- Pour batter into prepared pan and smooth the top. Bake for 80-90 minutes or until a toothpick comes out clean.
- Cool for about 15 minutes before transferring to a wire rack.
