Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together flour, baking powder, and baking soda.
- Using an electric mixer, cream together the softened cream cheese and butter until smooth. Gradually add sugars until light and fluffy.
- Beat in eggs one at a time until well combined.
- Slowly mix in dry ingredients until just combined; avoid overmixing.
- Fold in crushed pineapple and chopped pecans gently with a spatula.
- Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
