- 1 egg

- 1 avocado, sliced

Instructions
- Poach the egg: Bring water to a simmer in a small pot, add vinegar, slide the cracked egg into the water, and cook for about 3 minutes.

- On a serving plate, arrange avocado slices, roasted peppers, and cherry tomatoes alongside the toast.

- Drizzle olive oil over everything and season with salt and black pepper.
