Ingredients
- 200g lean ground beef or turkey
- 1 medium sweet potato, diced
- 1 ripe avocado, sliced
- 2 hard-boiled eggs, halved
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 tsp olive oil, for roasting
- Optional: fresh parsley or cilantro, for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden.
- In a skillet over medium heat, add olive oil. Cook ground meat until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
- In a mixing bowl, layer cooked ground meat followed by roasted sweet potatoes. Top with avocado slices and halved eggs. Garnish with parsley or cilantro if desired.
