  • 23 pounds flank steak
  • 1/3 cup sofrito
  • ¼ cup chopped cilantro
  • 8 cloves garlic (crushed)
  • ½ red bell pepper (sliced thin)
  • ½ green bell pepper (sliced thin)
  • ½ red onion (sliced thin)
  • 1 teaspoon chicken bouillon seasoning
  • 2 tablespoons olive oil (divided)
  • 12 cups water
  • 3 bay leaves

Instructions

  1. Marinate the flank steak in a large bowl with cilantro, sofrito, garlic, olive oil, seasoning, and spices. Let it marinate for at least 1 hour or overnight.
  2. Heat remaining olive oil in a pot over medium-high heat. Sauté the marinated steak for 5-7 minutes until browned.
  3. Add sliced bell peppers and red onion to the pot, stirring well. Pour in enough water to cover the meat and add bay leaves.
  4. Lower the heat and cover the pot; simmer for about an hour until the steak is tender.
