Ingredients
- 2–3 pounds flank steak
- 1/3 cup sofrito
- ¼ cup chopped cilantro
- 8 cloves garlic (crushed)
- ½ red bell pepper (sliced thin)
- ½ green bell pepper (sliced thin)
- ½ red onion (sliced thin)
- 1 teaspoon chicken bouillon seasoning
- 2 tablespoons olive oil (divided)
- 1–2 cups water
- 3 bay leaves
Instructions
- Marinate the flank steak in a large bowl with cilantro, sofrito, garlic, olive oil, seasoning, and spices. Let it marinate for at least 1 hour or overnight.
- Heat remaining olive oil in a pot over medium-high heat. Sauté the marinated steak for 5-7 minutes until browned.
- Add sliced bell peppers and red onion to the pot, stirring well. Pour in enough water to cover the meat and add bay leaves.
- Lower the heat and cover the pot; simmer for about an hour until the steak is tender.
