Ingredients
- 3 cups all-purpose flour
- 1 cup brown sugar
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ¾ teaspoon baking soda
- 2 cups pumpkin puree
- 4 large eggs
- ½ cup butter (softened)
- Vegetable oil
- Cinnamon and pumpkin pie spice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- For the streusel topping, mix together flour, brown sugar, granulated sugar, salt, and spices in a bowl. Stir in melted butter until it resembles wet sand. Set aside.
- In another bowl, combine flour, sugar, baking powder, baking soda, salt, and spices. Add butter in chunks and mix until combined.
- In a separate bowl, whisk together pumpkin puree, eggs, oil, and vanilla extract. Gradually add to the dry ingredients until well mixed.
- Spread half of the batter into the prepared pan, sprinkle with half of the streusel topping. Layer remaining batter followed by more streusel on top.
- Bake for about 35 minutes; then sprinkle remaining streusel on top and bake for an additional 10–15 minutes until a toothpick inserted comes out clean.
- Allow to cool before drizzling with icing made from powdered sugar and milk.
