  • 3 cups all-purpose flour
  • 1 cup brown sugar
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon baking soda
  • 2 cups pumpkin puree
  • 4 large eggs
  • ½ cup butter (softened)
  • Vegetable oil
  • Cinnamon and pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. For the streusel topping, mix together flour, brown sugar, granulated sugar, salt, and spices in a bowl. Stir in melted butter until it resembles wet sand. Set aside.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, salt, and spices. Add butter in chunks and mix until combined.
  4. In a separate bowl, whisk together pumpkin puree, eggs, oil, and vanilla extract. Gradually add to the dry ingredients until well mixed.
  5. Spread half of the batter into the prepared pan, sprinkle with half of the streusel topping. Layer remaining batter followed by more streusel on top.
  6. Bake for about 35 minutes; then sprinkle remaining streusel on top and bake for an additional 10–15 minutes until a toothpick inserted comes out clean.
  7. Allow to cool before drizzling with icing made from powdered sugar and milk.
