  • ½ teaspoon salt
  • ½ cup cold unsalted butter (cubed)
  • 24 tablespoons ice water
  • 1 cup pumpkin puree
  • 2 cups fresh sliced mushrooms
  • 1 tablespoon chopped fresh sage
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 8 ounces cream cheese (softened)
  • 2 large eggs
  • Black pepper to taste

Instructions

  1. Prepare the crust by combining flour and salt in a food processor. Add cold butter and pulse until crumbly. Gradually add ice water until dough forms. Shape into a disk, wrap, and chill for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Sauté onion in olive oil until translucent. Add sliced mushrooms; cook until soft. Stir in garlic and sage for another minute before removing from heat.
  4. Roll out the chilled dough and fit it into a tart pan. Mix pumpkin puree, cream cheese, eggs, sautéed mixture, and black pepper in a bowl until smooth.
  5. Pour filling into the crust and bake for about 35-40 minutes until set. Let cool slightly before serving.
