- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream softened butter with granulated sugar and brown sugar until fluffy.
- Mix in pumpkin puree, egg yolk, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add dry ingredients to the wet mixture; stir gently until just combined.
- Scoop dough onto lined baking sheets and space evenly.
- Bake for 10–12 minutes until edges are set; let cool on the sheet before transferring to a wire rack.
- For frosting: Beat cream cheese with softened butter until smooth; mix in powdered sugar and vanilla extract.
- Frost cooled cookies generously before serving.
