Ingredients

For the Dressing
1/4 teaspoon dried oregano
2 tablespoons red apple vinegar
1/4 cup extra virgin olive oil
1/8 teaspoon granulated sugar (or cane sugar)
1/2 teaspoon kosher salt
Freshly cracked black pepper, to taste

For the Salad
1 small red onion, finely diced
2 medium ripe tomatoes, diced into 1/2 inch pieces
1 English cucumber, diced into 1/2 inch pieces
4–5 fresh basil leaves, chopped

Instructions

  • In a small bowl, whisk together the dried oregano, apple vinegar, olive oil, sugar, salt, and freshly cracked black pepper until well combined.

  • In a large mixing bowl, combine the diced red onion, tomatoes, and cucumber.

  • Pour the dressing over the vegetables and toss gently to coat evenly.

  • Add the chopped fresh basil and lightly toss again.

  • Let the salad sit for 5–10 minutes at room temperature to allow the flavors to meld before serving.
