Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together ricotta cheese, sugar, and softened butter until smooth.
- Add eggs and vanilla extract; mix until fully combined.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually incorporate dry ingredients into the wet mixture until just combined.
- Gently fold in raspberries, pistachios, orange zest, and juice without crushing the berries.
- Pour batter into a greased 8-inch cake pan and spread evenly.
- Bake for 35–40 minutes or until a toothpick inserted comes out clean.
- Cool before transferring to a cooling rack.
