  • 2 ½ cups dry macaroni noodles (cooked according to directions, drained)
  • 1 cup diced deli turkey (instead of corned beef)
  • 1 cup cubed Swiss cheese
  • 1 cup drained sauerkraut
  • 1 cup diced dill pickles
  • ¾ cups thousand island dressing
  • ½ cup mayonnaise
  • 1 tablespoon dijon or stone ground mustard
  • 1 tablespoon sauerkraut brine from the jar
  • Optional salt and pepper (to taste)

Instructions

  1. Cook the macaroni according to package directions. Rinse under cool water, drain well, and set aside.
  2. In a small bowl, whisk together thousand island dressing, mayonnaise, dijon mustard, and sauerkraut brine until smooth.
  3. In a large bowl, combine the cooled macaroni with the dressing mixture. Add diced turkey, cubed Swiss cheese, drained sauerkraut, and diced dill pickles; mix until well coated.
  4. Cover and refrigerate for at least one hour before serving. Stir again before serving and adjust seasoning with salt and pepper if desired.
