Ingredients
- 4 stalks thinly sliced celery
- 1/2 cup finely chopped pitted medjool dates
- 1 medium mandarin orange, sliced
- 1/4 cup shelled pistachios, roughly chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 2 tablespoons freshly chopped flat-leaf parsley
- Sea salt and ground black pepper to taste
Instructions
- In a mixing bowl, whisk together the olive oil, lemon juice, sea salt, and black pepper until well combined.
- On a cutting board, thinly slice the celery stalks and chop the dates finely. Slice the mandarin orange into rounds.
- In the mixing bowl, combine the sliced celery, chopped parsley, chopped dates, and mandarin orange slices. Drizzle with the dressing and toss gently until evenly coated.
- Add the roughly chopped pistachios and give one last gentle toss to incorporate.
- Serve immediately as a refreshing side or appetizer.
