Instructions
- Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
- In a small bowl, combine olive oil, minced garlic, and Italian seasoning; let sit for 5-10 minutes.
- In a large mixing bowl, toss together sliced zucchini, yellow squash, and halved tomatoes with the garlic-infused oil until evenly coated.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet and sprinkle with salt and pepper.
- Top with shredded Parmesan cheese and roast for 25-30 minutes until tender and golden brown.
- Remove from oven, garnish with parsley if desired, and serve hot.
