Ingredients
- 1 (4 to 5 lb) bone-in lamb leg, trimmed
- 1/4 cup Dijon mustard
- 3 tbsp honey
- 2 tbsp olive oil
- 5 cloves garlic, minced
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix together Dijon mustard, honey, olive oil, and minced garlic until well combined.
- Place the trimmed lamb leg in a roasting pan and generously coat it with the honey-Dijon glaze using a basting brush.
- Roast in the preheated oven for approximately 1.5 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium-rare. Baste every 30 minutes with remaining glaze.
- Remove from oven and cover loosely with aluminum foil; let rest for about 15-20 minutes before carving.
