  • 1 lb refrigerated tortellini (your choice of flavor)
  • 8 oz mozzarella cheese (cubed)
  • 4 oz mini turkey pepperoni
  • 4 oz sliced black olives
  • 1/2 pint cherry tomatoes (halved)
  • 2 jarred roasted red peppers (diced)
  • Fresh basil for garnish

Instructions

  1. Boil water in a large pot and cook tortellini according to package instructions until al dente. Drain and cool.
  2. In a mixing bowl, combine turkey pepperoni, black olives, mozzarella, cherry tomatoes, and diced roasted red peppers.
  3. Add cooled tortellini to the mixture and stir well.
  4. Prepare the dressing by whisking together reserved roasted red pepper oil, olive oil, balsamic vinegar, apple cider vinegar, and Parmesan cheese.
  5. Pour the dressing over the salad mixture; toss to coat evenly with seasoning.
  6. Chill in the refrigerator for at least one hour before serving. Garnish with fresh basil.
