- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter (divided)
- 24 ounces cream cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 3 medium apples, peeled and diced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup granulated sugar (for caramel sauce)
- 1/2 cup heavy cream
- 1 teaspoon sea salt
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- For the crust, mix graham cracker crumbs with sugar and melted butter; press into the bottom of the springform pan. Bake for 10 minutes.
- In a bowl, beat softened cream cheese until smooth, then add sugar, eggs one at a time, vanilla, and sour cream until combined.
- Pour filling over the cooled crust and bake in a water bath for 55–65 minutes until slightly jiggly in the center.
- Cool gradually in the oven with the door cracked for an hour; chill in the refrigerator for at least 4 hours.
- Prepare apple topping by sautéing diced apples with butter, brown sugar, cinnamon, and nutmeg until soft; let cool.
- Make salted caramel by melting sugar until amber, adding butter and slowly whisking in heavy cream; stir in sea salt and cool.
- Top chilled cheesecake with apple mixture and drizzle with salted caramel before serving.
