  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel sauce)
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust, mix graham cracker crumbs with sugar and melted butter; press into the bottom of the springform pan. Bake for 10 minutes.
  3. In a bowl, beat softened cream cheese until smooth, then add sugar, eggs one at a time, vanilla, and sour cream until combined.
  4. Pour filling over the cooled crust and bake in a water bath for 55–65 minutes until slightly jiggly in the center.
  5. Cool gradually in the oven with the door cracked for an hour; chill in the refrigerator for at least 4 hours.
  6. Prepare apple topping by sautéing diced apples with butter, brown sugar, cinnamon, and nutmeg until soft; let cool.
  7. Make salted caramel by melting sugar until amber, adding butter and slowly whisking in heavy cream; stir in sea salt and cool.
