Ingredients
- 14.5 tbsp salted butter (206 grams), melted & cooled
- 3/4 cup dark brown sugar (163 grams), packed
- 3/4 cup granulated sugar (156 grams)
- 1 and 1/2 tsp vanilla extract
- 2 large eggs, room temperature
- 3 cups all-purpose flour (390 grams)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups semi-sweet chocolate chips
- 35 pieces soft caramels
Instructions
- Unwrap caramels: Set aside 15 for stuffing and slice the rest into smaller pieces.
- In a large mixing bowl, melt butter and whisk in sugars until well combined.
- Add vanilla and eggs; whisk until smooth.
- Stir in flour, baking powder, baking soda, and salt until dough forms; fold in chocolate chips.
- Chill dough for about 20 minutes in the fridge or freezer.
- Scoop dough into balls (90 grams each), flatten slightly, place a caramel inside, wrap dough around it, and top with sliced caramels and extra chocolate chips.
- Preheat oven to 365°F (185°C). Line baking sheets with parchment paper and bake cookies for 10-12 minutes until edges are golden.
- Let cool briefly before enjoying warm!
