  • 3/4 cup dark brown sugar (163 grams), packed
  • 3/4 cup granulated sugar (156 grams)
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs, room temperature
  • 3 cups all-purpose flour (390 grams)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 35 pieces soft caramels

Instructions

  1. Unwrap caramels: Set aside 15 for stuffing and slice the rest into smaller pieces.
  2. In a large mixing bowl, melt butter and whisk in sugars until well combined.
  3. Add vanilla and eggs; whisk until smooth.
  4. Stir in flour, baking powder, baking soda, and salt until dough forms; fold in chocolate chips.
  5. Chill dough for about 20 minutes in the fridge or freezer.
  6. Scoop dough into balls (90 grams each), flatten slightly, place a caramel inside, wrap dough around it, and top with sliced caramels and extra chocolate chips.
  7. Preheat oven to 365°F (185°C). Line baking sheets with parchment paper and bake cookies for 10-12 minutes until edges are golden.
