  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for topping

Instructions

  1. Prepare your pie crust in an 8-inch or 9-inch pan and chill in the fridge.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt over medium heat; stir until boiling and thickened.
  3. Remove from heat and temper egg yolks by gradually mixing in the hot cream.
  4. Return the egg mixture to the saucepan, add honey and vanilla, then mix well.
  5. Pour into the chilled crust and bake at 375°F (190°C) for about 40–45 minutes until bubbly.
  6. Cool to room temperature, then refrigerate until fully chilled.
  7. Before serving, sprinkle with flaky sea salt.
